African chickpea stew by Johan Bergman

If you, just like me, love peanut butter (who doens't love peanut butter?), I highly recommend this peanut butter flavored chichpea stew.
Serve with pasta for example.

Ingredients for 4 servings
- 1 onion, chopped
- 10 5/8 ounces of chickpeas, boiled
- 1 1/8 pounds of crushed canned tomatoes
- 5 tablespoons of peanut butter
- 2 1/8 cups of vegetable broth
- cashew nuts
- curry powder
- black pepper
- thyme
- salt
Instructions
- Start by frying the onion in a saucepan. Then add the crushed canned tomatoes, the chickpeas, the broth and the peanut butter.
- Flavor (the spices in the ingredient lists are just a recommandation) and cook for about 10 minutes.
- Add the cashew nuts on the top when the stew is done.
