Couscous with mixed vegetables and fried ham

A cheap and straightforward dish perfect for those moments when you just want to make things simple. The vegetables mentioned below are just examples of what the mix can consist of, so feel free to use whatever you have available!

Personally I like to add some finely sliced ham into the pan, but you can also make it 100% vegetarian.

Ingredients for 4 servings

  • 1 1/4 cups of couscous
  • 1 zucchini
  • 2 tomatoes
  • 7/8 cup of crème fraîche, can be replaced with youghurt as well
  • ham, feel free to take as much as you want!

Instructions

  1. Slice the vegetables into small pieces and fry them with some olive oil. Add sliced ham into the pan.
  2. Heat some water for the couscous according to the instructions on the package.
  3. Add some crème fraîche (can be replaced with yoghurt) into the frying and cook it quickly.
  4. Add some spices according to your choice (oregano is usually a good base).
  5. Serve with fresh salad and button mushrooms.
