Meringues

If you're planning to arrange a party and want some dessert "snacks" (for example to serve with ice cream), I think that meringues is an excellent choice. It takes a while to whip the batter if you're doing it by hand, but be patient – it will be worth it in the end!

Note: When you separate the yolk from the white, be careful so that no yolk is added into the large bowl. One safe solution is to separate each egg white into a small bowl first and then add the white into the large bowl only if there's no yolk in it.

Ingredients for 1 batch

  • 6 eggs, white
  • 2 1/2 cups of confectioner's sugar

Instructions

  1. Preheat your oven to 255°F.
  2. Add the egg white in a large bowl (remember: the egg white will expand a lot!) and start to whip it. Then gradually add the sugar along the whipping process. The batter has to be whipped until it reaches the stiff peaks stage.
  3. Add dollops of the batter on a greased sheet pan.
  4. Bake your meringues in the owen for about 40 minutes.
  5. Let the meringues cool down until served.
