Simple pumpkin soup by Johan Bergman
This a recipe of a delicious and simple pumpkin soup I had the pleasure to eat while staying at a friends place after a long bicycle drive. Although it might not look that "hefty" it was a perfect recovery for my tired legs.
The soup was served with freshly baked bread.

Ingredients for 4 servings
- 2 5/8 pounds of pumpkin, diced
- 2 onions, chopped
- 4 garlic cloves, chopped
- 4 1/8 cups of vegetable stock
- 7/8 cup of crème fraîche
- 2 tablespoons of Sambal oelek
- 1 lime, juiced
Instructions
- Fry the onion in a saucepan.
- Add the pumpkin and the vegetable stock.
- Cook everything for about 10 minutes.
- Blend the ingredients until it becomes a smooth soup. Add the crème fraîche, the Sambal oelek and the lime.
- Allow to come to a boil before you serve it.
