Simple pumpkin soup

This a recipe of a delicious and simple pumpkin soup I had the pleasure to eat while staying at a friends place after a long bicycle drive. Although it might not look that "hefty" it was a perfect recovery for my tired legs.

The soup was served with freshly baked bread.

Ingredients for 4 servings

  • 2 5/8 pounds of pumpkin, diced
  • 2 onions, chopped
  • 4 garlic cloves, chopped
  • 4 1/8 cups of vegetable stock
  • 7/8 cup of crème fraîche
  • 2 tablespoons of Sambal oelek
  • 1 lime, juiced

Instructions

  1. Fry the onion in a saucepan.
  2. Add the pumpkin and the vegetable stock.
  3. Cook everything for about 10 minutes.
  4. Blend the ingredients until it becomes a smooth soup. Add the crème fraîche, the Sambal oelek and the lime.
  5. Allow to come to a boil before you serve it.
