Salmon with pesto by Johan Bergman

Salmon with pesto

Salmon and pesto is a very nice combination together. Regular pesto (i.e. the green one) or red pesto can be used. Red pesto was used when the image was taken.

Serve with rice and a fresh salad.

Ingredients for 4 servings

  • 4 salmon fillets
  • 3 1/2 ounces of pesto
  • 5 1/4 ounces of cashew nuts

Instructions

  1. Turn on the oven and put it on 390°F.
  2. Put the salmon into a greased oven dish.
  3. Spread the pesto flat and smooth on each salmon fillet.
  4. Add the cashew nuts and some olive oil on top of the salmon.
  5. Bake in the oven until done.
