Sautéed reindeer sauce with apricots by Johan Bergman
Inspired by Icakuriren

This is a recipe that might be difficult to cook outside Sweden since the typical Swedish butter messmör (soft whey butter in English) is used.
But, if you either live in Sweden or are a lucky enough to get hold of some messmör, I can really recommend this nice recipe with sautéed reindeer.
If you don't have any dried apricots at home, dried figs will work as well.

Ingredients for 4 servings
- 8 7/8 ounces of reindeer, sautéed
- 1 onion, chopped
- 10 5/8 ounces of button mushrooms
- 8 dried apricots, chopped
- 3 1/3 tablespoons of soft whey butter
- 7/8 cup of cream
- 2 tablespoons of soy sauce
Instructions
- Fry onion, reindeer and button mushroom until they have got a nice color.
- If you don't have a big frypan, move everyting into a saucepan and then add apricots, soft whey butter, cream and soy sauce.
- Mix everything together and cook it for some minutes.
- Add pepper and salt according to your choice.
