Carrot rösti by Magnus Nordlander
Based on a recipe from Att koka soppa på en låda
Sometimes I have a lot of carrots, and in a lot of food that I make, carrots aren't exactly the main ingredient. Not so with these carrot rösties, where the potatoes are switched out for carrots.
I suggest serving with mashed potatoes.

Ingredients for 4 servings
- 5 carrots, finely grated
- 1 onion, finely chopped
- 2 eggs
- 3 tablespoons of breadcrumbs
- 1 tablespoon of potato starch
- 1 tablespoon of fresh oregano, chopped
- salt
- black pepper, freshly ground
Instructions
Mix all the ingredients together in a bowl. Allow to rest for 10 minutes, before shaping into patties and frying in a little butter over medium heat until golden brown and delicious.
