Chick pea patties by Magnus Nordlander
Based on a recipe from Att koka soppa på en låda
These chick pea patties are both fast and easy to make. They taste great, and can be varied with different herbs, or aromatic vegetables. All in all, they're a great compliment to many different kinds of side dishes.
I suggest serving with roasted potatoes.
Ingredients for 3 servings
- 2 garlic cloves, finely minced
- 1 shallot, chopped
- 14 1/8 ounces of chickpeas
- 1 egg
- 1 tablespoon of dijon mustard
- 1 tablespoon of parsley, finely chopped
- 1 3/4 ounces of breadcrumbs, home made
- salt
- black pepper, freshly ground
Instructions
Pulse the garlic and the shallot in a food processor, to chop them up, then add the chickpeas, the mustard, the egg and the parsley, before pulsing until puréed. Stir in salt, pepper and the breadcrumbs, to give it enough texture to be able to form patties.
Form patties, and fry over medium heat until golden brown and delicious.
