Guacamole

I may or may not have posted some less than authentically mexican tex-mex recipes here before. This, however is more like the real deal. A real guacamole, and a really good one at that.

If you want to up the heat a little, you could add more jalapeño, or you could mix the jalapeño with some hotter chili. I wouldn't replace the jalapeño entirely though.

Ingredients for 1 batch

  • 2 avocados
  • 1 lime, juiced
  • 1/2 onion, finely chopped
  • 1 tomato, seeded and finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 2 garlic cloves, finely chopped or pressed
  • 2 tablespoons of fresh cilantro, finely chopped
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of cumin
  • salt
  • black pepper, freshly ground

Instructions

Remove the avocado flesh from the skins, and put in a small flat bottomed container, add the lime juice immediately and toss to prevent browning. Add the onion, tomato, jalapeño, garlic, cilantro, cayenne and cumin, and mash with a potato masher. This keeps the guacamole nice and chunky. Add salt and pepper to taste.

If you want it to be even better and are preparing ahead of time, and allow the guacamole to rest for an hour before adding the salt and pepper.
