Italian tomato and sausage pasta by Magnus Nordlander
There are many different recipes for pasta sauce, but I think that this one is one of the better. Simple, yet scrumptious. You really need to try it.
Ingredients for 8 servings
- 1 3/4 pounds of canned whole tomatoes
- 1 1/8 pounds of italian sausage
- 2 garlic cloves
- 1 onion
- 7/8 cup of red wine
- tomato paste
- red pepper flakes
- fresh basil, chiffonade
- 1 3/4 pounds of spaghetti
- salt
- black pepper, freshly ground
Instructions
Start off by softening the onion and the garlic in splash of olive oil, in a large saucepan over medium heat. Once they have softened, add the sausage, and sweat for a couple of minutes before adding the canned whole tomatoes, the tomato paste, the red pepper flakes and the wine.
Allow this to cook over low heat for 15-20 minutes. The tomatoes should be falling apart while cooking. If they're not, you'll need to help them along a bit. Cook the pasta while the sauce is cooking. In the last minute of cooking the sauce, add half of the basil. Season with salt and freshly ground black pepper.
Mix the sauce and the spaghetti, serve, and garnish with the remaining basil.
