Mom's kladdkaka by Magnus Nordlander

This recipe for kladdkaka, a dessert item, not entirely dissimilar to a brownie, but if prepared right, much chewier. The name is swedish and literally translated it means sticky cake.
To make it more fancy, serve with whipped cream and perhaps some raspberries or sift a fine layer of confectioner's sugar on top of it. The possibilities are endless.
Ingredients for 1 cake
- 2 eggs
- 1 1/4 cups of sugar
- 5/8 cup of flour
- 4 tablespoons of cocoa powder
- 1 pinch of salt
- 2 teaspoons of vanilla sugar
- 3 1/2 ounces of butter
Instructions
Pre-heat your oven to 345°F.
In a bowl, add all the ingredients, and mix until it comes together into a batter. Don't over mix it or you'll end up with lots of gluten strands in it which wouldn't be good for the consistency. Until it comes together but no more.
Pour the batter into a spring form pan, for easy extraction. To make this even easier, use a non-stick pan, and place a sheet of parchment paper between the bottom and the side of the pan before assembling it.
Bake in the oven for about 15-20 minutes. Allow to cool down before serving.
