Pizza salad by Magnus Nordlander

Despite what the name makes you think, this doesn't contain pizza, and it's not really Italian.
Pizza salad is actually a side dish served at most Swedish pizzerias. It is said that is was invented in the sixties by Giuseppe Sperandio, who ran one of the first (and early on most popular) pizzerias in Sweden.
Ingredients for 1 batch
- 1/2 cabbage head, shredded fine
- 6 2/3 tablespoons of olive oil
- 6 2/3 tablespoons of white wine vinegar
- 1 teaspoon of salt
- black pepper, freshly ground
Instructions
Add the cabbage to a big bowl, and crush it slightly using a pestle. Add the rest of the ingredients, and toss them together. Stash in your fridge overnight before serving.
