Roasted beets with Camembert by Magnus Nordlander
This is a great way to prepare baby beets, especially if you're already planning to fire up the grill.
If you don't have a grill, you can cook it in a 225°C (450°F) oven, instead.
Ingredients for 2 servings
- 8 baby beets, boiled, peeled and halved
- 1/2 red onion, frenched
- 1 3/4 ounces of camembert, diced
- 1 stalk of rosemary
- 7/8 ounce of butter
- salt
- black pepper, freshly ground
Instructions
On a double sheet of foil, place the beets, the onion, the rosemary, the cheese and the butter. Salt and pepper. Fold up into a pouch, not a tight seal, make sure to leave some way for steam to escape.
Cook the pouch on a hot grill, for about 10 minutes, before removing the rosemary and serving.
