Tabbouleh

I know, tabbouleh is traditionally made with scallions, but I find that shallots give a more interesting taste.

The traditional way to eat tabbouleh is with a lettuce leaf, but if you use a pita instead, I won't tell anyone :)

Ingredients for 4 servings

  • 1 cup of bulgur
  • 4 tomatoes, seeded and chopped
  • 2 shallots, finely chopped
  • 7/8 cup of flat leaf parsley, chopped
  • 6 2/3 tablespoons of mint, chopped
  • 2 lemons, juiced
  • 3 1/3 tablespoons of olive oil
  • salt
  • black pepper, freshly ground

Instructions

Cook the bulgur, usually you can just add twice as much boiling water by volume to the bulgur. It takes about 15 minutes. Strain off any excess water.

Add the rest of the ingredients and mix.

You can serve it right away, but it gets even better after a couple of hours.
