Chocolate chip pancakes with blueberry whipped cream

American style pancakes served with blueberry whipped cream.

Ingredients for 6 servings

Dry ingredients

  • 2 7/8 cups of flour
  • 6 tablespoons of sugar
  • 2 tablespoons of baking powder
  • 1 pinch of salt
  • 1 3/4 ounces of dark chocolate, chopped or chips

Wet ingredients

  • 3 tablespoons of canola oil
  • 3 eggs
  • 1 cup of milk

Whipped cream

  • 1 1/4 cups of whipping cream
  • 7/8 cup of blueberries

(Optional)

  • 2 teaspoons of maple syrup

Instructions

Mix the batter using the muffin method. Make sure you do this in a large bowl suitable for mixing, since the final preparations calls for space in the bowl. When mixed, add milk to the batter until the texture is the way you personally desire.

Defrost the blueberries if frozen, if you want your whipped cream to be a bit sweeter slowly heat the blueberries in 2 teaspoon of maple syrup before adding them to the whipping cream.
